Less UI, More Content.

Exactly right. Something touch-device manufacturers should also consider is display resolution with respect to screen size.

There needs to be a balance. Larger displays that maintain lower resolutions have the problem of making already large tap targets even larger. This makes chrome more prominent while providing no added value in displayed content. Larger displays with higher resolutions display more content, but at font sizes that are illegible without a lot of zooming.
